Sweet Pork

Thanks to Karli for sharing this recipe with us! This sweet pork is similar to Costa Vida's sweet pork and is excellent in salads or burritos.

Ingredients:
Pork Roast
Sauce:
3 8oz. cans tomato sauce
2 8oz. cans El Pato sauce
2 cups brown sugar
1 cup water

Cut pork roast and fill jars. Pour sauce mixture over roast. (multiply sauce recipe as needed for amount of roast). Cook at 15 pounds of pressure for 90 minutes. Store and enjoy!

I used pint jars this morning. Just the right size for my family. But if you've got a big family, maybe quarts the right size for you. The way I look at it... when emergency strikes, you won't really care what size jar it's in :) Happy canning!

I want to clarify the process of canning this Sweet pork. Did you pre-cook you roast or was is raw meat that you pored the sauce over? I know you can can meat is raw form because I have do it numeous times, but I was not sure how you went about it with the Sweet Pork. Thanks, Deanne

We use this sweet pork in salads, burritos, etc. If you have ever been to Cafe Rio, Costa Vida, or a Bajio sort of a place this is like the meat that they use. I shred it, heat it up, and my favorite is to layer it in a salad with black beans, rice, and then all of the traditional salad stuffs.

I can this with raw meat. I just stuff it in, pour sauce over it, and can it. :)
